reduced a mix of orange juice and pineapple juice with a touch of fish sauce, soy, galic powder and onion powder to a glaze.

seared a hunk of fresh salmon on all six sides for about a minute to 75 seconds to a side, on a stainless surface with a touch of oil, then drizzled on the reduction.

side of salad with a ginger dressing.
