Small grilled steak, with fried green tomatoes, potato salad made from small red potatoes steamed in garlic dosed red wine + water, then tossed with french dressing and halved cherry tomatoes plus pine nuts. Cup of fruit compote for dessert.

The potato salad is pretty good, but really different.

Broccoli and cheese brown rice, a broiled minute steak, and 1/2 cup of mandarin orange slices for dessert.

I decided to make gingerbread waffles earlier...and it was probably one of the best decisions I've ever made.

All that was missing was probably hot coffee...or coffee ice cream :P

Picked up some Apple Pie Cheesecake from a local bakery on the way home.

Dinner was porcupine meat balls with rotini in parmesan alfredo sauce, with a side of green onions and red bell pepper strips sauteed with asparagus tips.

Skinning porcupines is dead easy. Cut the head off, flip it onto its back, split the abdominal skin from anus to throat, slit the inside of each leg to join the abdominal cut, cut off the paws, peel it like a rabbit until all that is left attached is the tail, then cut off the tail. The abdomen is a solid slab of muscle, and the thighs are about the size of turkey drumsticks.

Pretty tasty, in late summer or fall when they've fattened up all summer. Spring porkies have over-wintered on evergreen twigs and bark, and taste like turpentine.

Porcupine meatballs, however, do not contain porcupone meat

1 Avocado(mashed), prob about a tbsp of Lime juice, little bit of cumin, little bit of cilantro, sea salt, shredded iceberg lettuce(lots), cut up cherry tomatoes, about a 1/2 cup of Fage(plain greek yogurt), little bit of minced garlic, little bit of smoked paprika, little bit of chopped red onion.

mix it all together. sorry for approximates, but I just throw stuff together without measuring.
It's pretty much the only thing I use ice berg lettuce for, too. My regular salads are kale, spinach, or arugula.
have been eating this for lunch almost every day lately. haha

Haha, I remember Fage well. Damned if I know what arugula is.
The best cooks IMHO rarely measure stuff but do it by 'feels'. Isn't kale something people eat to be healthy but it tastes like ass?

Also, iceberg is only good for that Viet stuff...can't remember the name.
It's pretty dire unless it's used as a parcel to house noms.
I have bad memories of 70's bbq's of people bringing the salad and it being just iceberg, white onion, a few cut up tomatos and little else. If someone went gourmet you might see some cubed cheddar.

arugula is a kind of peppery tasting leaf lettuce.
kale is alright. doesn't have a lot of flavour, really.
9 times out of ten, I go for spinach/baby spinach.

Ok, I've had arugula before in the funky salads you get in upmarket cafe's.
I haven't really seen it for sale in the grocery places I frequent though. On the opposite end of the bad salad scale is the very same cafe's that have about 16 types of lettuce/spinach etc. and one cherry tomato. I need balance in my salads.
