Europa by Santana - without a doubt my favorite, I would think. Also the Mountain Jam by the Allman Brothers and In Memory of Elizabeth Reed, if that's the one I'm thinkin of. The one with the longass Dickey Betts solo on it.

I like altan, a celtic band that my ex got me into. i can just remember watching them and loving their energy. (it's 50/50 instrumentals/vocals)

but the best has to be the instrumentals from the fragile, Nine Inch Nails. They're breathtaking.
